Pastry Chef – Hotel – St Mawes – Up to £35,000 – Live-in
We are currently seeking a highly skilled and passionate Pastry Chef for a popular hotel in Cornwall. This luxury hotel is searching for a classically trained professional with a background in luxury hotels. The ideal candidate will have a deep love for pastry and possess the talent and creativity to lead the pastry team and deliver exceptional desserts and baked goods.
Responsibilities:
- Oversee and lead the pastry department, ensuring the highest quality of desserts, pastries, and bread products.
- Develop and create innovative pastry recipes and menus that align with the concept and delight guests.
- Maintain and enforce strict quality and consistency standards, paying meticulous attention to flavour, presentation, and execution.
- Manage a small pastry team, providing guidance, training, and mentorship to ensure a cohesive and motivated team.
- Collaborate closely with the culinary team to ensure seamless integration of pastry offerings with the overall menu.
- Control food costs and manage inventory to maximize profitability while maintaining high-quality standards.
- Stay up to date with industry trends and techniques, incorporating new ideas and innovations into the pastry program.
- Ensure compliance with food safety and sanitation regulations, maintaining a clean and organized pastry kitchen.
- Contribute to menu development and participate in tastings and menu planning sessions.
Qualifications:
- Extensive experience as a Senior Pastry Chef in high-end, classically trained culinary environments, ideally in restaurants or luxury hotels.
- A true passion for pastry is demonstrated through a strong portfolio of creative and visually stunning desserts and pastries.
- Excellent leadership and team management skills, with the ability to inspire and motivate a team to achieve culinary excellence.
- Proven ability to develop and execute new pastry concepts and menus.
- Deep knowledge of classic pastry techniques, including baking, chocolate work, sugar work, and plated desserts.
- Exceptional organizational and time management skills, capable of managing multiple projects and priorities simultaneously.
- Relevant culinary qualifications and certifications are highly desirable.
